Pulled Pork Leftovers

Leftovers Pulled Pork with Potato Wedges and Beans the perfect winter warmer dish that is fun to do but even better to eat!

Method

Bake until crispy

Preheat the oven to Gas mark 6, 200°C, 180°C Fan. Cut the potatoes into wedges and place them on a non-stick baking sheet. Toss the wedges in the oil and paprika. Season and bake for 20–25 minutes until crispy, turning once during cooking.

Get cheesy!

Remove the wedges from the oven, top with the pulled pork and sprinkle with the cheese. Return to the oven and cook for a further 7–8 minutes, until the cheese has melted and the pork is heated through until piping hot.

And to serve …

Garnish with the spring onions and serve the pulled pork and potato wedges with a serving of barbecue beans. Leftover Pulled Pork

390g can baked beans in barbecue sauce
