Choose from any of the flavours in the drop down menu and we cut in the traditional manner from our well hung, dry aged, hindquarters bought from our local farmers (see traceability below). We then season the meat well with your choice of marinade and vacuum pack into 500g (1lb 2oz) packs to seal in the flavours.
