Centre Cut Beef Fillet is the Kings own cut! As described, its the trimmed middle section of the whole fillet and is cylindrical in its appearance. Its very tender muscle as it does little work and sits inside the carcass under the sirloin & rib cage. Its also very lean. Most widely used for Beef Wellington or for cutting prime Centre Cut Beef Fillet steaks yourself. Its also the most expensive cut on the whole carcass!
