Sirloin steak with caramelised red onions

Sirloin steak with caramelised red onions

The Roll’s Royce of fried steak, this is a perfect meal for you and your loved one on Valentine’s Day.

Preheat your oven to 180ºc. Toss your potatoes in a little olive oil and salt, strip one sprig of rosemary and scatter in, then put into a roasting dish. Put in the oven and cook for around 40 minutes, until the skins are golden and crispy.

Gently fry your onions in a little oil until soft. Sprinkle over the vinegar, stir well to coat, and then sprinkle in the sugar and stir well. Turn down to the lowest heat and set aside.

Season one side of your steak with salt and pepper, rub with a little olive oil and put into a hot griddle pan. Fry on one side for 2 minutes, and while that’s frying rub oil and season on the side that’s up in the pan. Turn and cook for a further two minutes. (This is for a medium steak – cook for longer if you want it well done.) Remove from the pan, put a nob of garlic butter on each and set aside. Leave to stand for about 5 minutes while you dish up the other ingredients.

Put the potatoes on a plate, along with the salad, and then put the steak on top. Stir the onions and put those on top of the steak. Now serve, and enjoy!
