Fallow deer were introduced to British parks and forests by the Normans in the eleventh century and have since become the most widespread species of deer in Britain. They are smaller than Red Deer and tend to have more fine-grained and delicate meat.
Our stalkers manage small wild herds of Fallow Deer on Devon estates. After being shot by professional marksmen, the carcasses are hung to mature ensuring a superb flavour and texture.
