Meatloaf
(Serves: 6)

The meatloaf
Preheat your oven to 150C.
In a pan, fry the onion until soft, then tip into a large mixing bowl.
Add the remaining ingredients and mix thoroughly with your hands until you have formed a firm ball. Push this into a deep, square, oven-proof dish or tin, such as a bread tin, then cover with foil and cook in the oven for 45 minutes.
Remove from the oven, uncover, turn the oven up to 180C and cook for another 30 minutes.
The sauce
Just before the meatloaf comes out of the oven for the first time, fry the onion until soft, then add the garlic for a minute or two.
Add the tomatoes and pepper and simmer gently for 30 minutes, making sure it doesn't dry out.
Either in a blender or using a hand mixer, blend the sauce until smooth. Keep warm.
To serve
Slice the meatloaf and serve with the sauce, mashed potatoes and fresh green vegetables.
