Commercial culling of kangaroos is restricted to leasehold and freehold land which is being used for primary production. Such culling takes place in Queensland, New South Wales, South Australia and Western Australia. Kangaroo are culled in Australia by only licensed hunters. These licenses are granted by the Government and hunters must pass a Government approved course which instructs them in aspects such as the laws controlling kangaroo culling, meat hygiene and animal welfare. In addition to this, their equipment must be approved by a Government inspector to ensure it is of the right standards. The RSPCA has described Kangaroo harvesting as "one of the most humane methods of animal slaughter possible".
Kangaroo meat is succulent, versatile and lean red meat. It is very well known throughout the world as a high quality game meat. It is both succulent and versatile and also rich in iron and low in fat. Kangaroo steaks work well with seasoning while keeping their unique taste.
